Paul forged his career working for Ben O’Dononghue and Jamie Oliver at Montes Private Member’s club Knightsbridge in 2000. In 2002 he joined The Glasshouse for two years, followed by Thackeray’s in Tunbridge Wells.
It was at Maze, in London, where Paul worked alongside Jason Atherton as his right hand man; first as Sous Chef and thereafter as Senior Sous.
In 2011, Paul joined Jason as his head chef for Pollen St. Social, allowing him to expand his knowledge of the business whilst advancing his own creativeness in the kitchen under Jason’s leadership.
Following a successful two years at the highly acclaimed ‘PSS’ which was awarded a Michelin star in its first year, Paul has been handed the reins here at Social Eating House – bringing together his own formidable brigade of young and talented chefs.
